Ingredients

  • 1 1/2 cups processed rice flour/idiyappam flour
  • 1/2 cup gram flour/kadalai mavu
  • 4 tablespoons hot oil/melted butter
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon sesame seeds optional
  • 1 teaspoon chili powder
  • Salt
  • Oil for deep frying
  • Water

Instructions

  • First begin by heating oil for deep frying. Once the oil is hot maintain medium flame.
  • Sift rice flour, gram flour very well for 2-3 times. Add chili powder, asafoetida, sesame seeds, cumin seeds and salt. Mix very well.
  • Now take 4 tablespoons of hot oil and add to the flour mixture. Mix very well and rub well.
  • Add water little by little and make a soft pliable dough. Do not make a hard dough.
  • Take the murukku press with star shaped achu. Fill 3/4 of the press with dough and make round murukku. If you are comfortable you can press directly in the hot oil, else make murukku on a clean cloth, butter paper or plate and then transfer to the oil.
  • Deep fry 3-4 murukkus depending on the size of your kadai. Slide the shaped murukkus and deep fry in medium flame till the sizzling (shh) sound ceases. Flip gently in between while frying. Drain to a kitchen towel. Allow to cool thoroughly and store mullu murukku in airtight container.

Notes

1. While saping murukkus, keep the remaining dough closed, if the dough becomes dry murukku will turn dark while frying.
2. Make sure the dough is soft and pliable, if the dough is very hard murukku while break.
