Ingredients

  • Mixed beans
  • Water
  • Hot box/casserole

Instructions

  • Pick the beans leaving out split beans as they will rot the whole batch.
  • Wash the beans thoroughly 2-3 times under running water.
  • Take the beans in a large deep bowl and add enough water to it,the water level should be 2-3" above the beans. Cover and soak the beans over night or 7-8 hours.
  • The beans will be plump and soft after 7-8 hours. Now drain the beans thoroughly using a colander. Let it rest for 15 minutes so that all the water is drained. The beans should be damp.
  • Take a clean dry hot box/casserole and transfer the damp beans to it. Cover and keep it undisturbed in a clean cool place (do not refrigerate) for 18-20 hours.
  • nd day you will see small shoots in the beans. Moong would have already sprouted well. There will be a pungent smell and that is common with sprouts,but if you feel the smell is strong,rinse the beans once and drain thoroughly and again transfer to the hot box and keep it undisturbed for 10 hours.
  • Now after 10 hours the shoots would have been grown more. Take the sprouted beans and rinse well,refrigerate till use.
  • you can make sprouts sandwich,pulao,salad and many more.

Notes

1. The slight pungent smell in sprouts is natural and it will go off once you rinse and cook.
2. Keep the sprouted beans in fridge and use within a week
