Pottukadalai Urundai Recipe

Pottukadalai urundai recipe is an authentic Tamil recipe with roasted gram and jaggery.Very healthy and tasty treat for kids/toddlers.

Ingredients

  • 2 cups roasted gram
  • 1 1/2 cups grated jaggery or powdered jaggery
  • 1 teaspoon cardamom powder
  • 1 teaspoon ghee

Instructions

  • Grate,clean and measure 1 1/2 cups of jaggery. Measure 2 cups roasted gram and set aside.
  • Dissolve the jaggery in 3/4 cup water and start heating.
  • Bring it to a rolling boil and heat till the syrup reaches soft ball consistency (pottu padham-if you drop a the syrup on a plate it should stand like a soft ball)
  • Once it reaches the soft ball consistency,add the roasted gram and mix well.Stir for 2-3 minutes,add ghee,cardamom powder,mix well and remove from flame.
  • Allow the mixture to become warm (do not let it cool)
  • Make small ladoos from the mixture.Store in airtight box.

Notes

1.The color of the ladoos depends on the color of the jaggery you use
2.If the consistency of the syrup is not correct,the mixture will be very runny and you will not be able to shape the balls,in that case you can heat the entire mixture for 5- minutes,cool and try shaping again
3.Do not let the mixture cool completely as it will trun rock hard and you will not be able to shape out balls.Finish making the balls while the mixture is still warm
