rinse and pressure cook toor dal. Mash well and set aside.
Soak tamarind in hot water for 15 minutes. Extract thick juice and set aside.
Heat oil in a pan. Temper with mustard seeds and curry leaves.
Add the cubed vegetables and saute well. Add turmeric powder, sambar powder and saute well.
Add tamarind extract and mix well. Add 1.5 cups water and bring to a boil.
Add the prepared coconut paste and mix well. Season with salt and boil for 5 minutes.
Add the mashed toor dal and mix well.Simmer for 5 more minutes.
Add cilantro leaves and mix well. Remove from flame. Serve sambar with rice.
