Spicy Bun recipe | Masala Bun Recipe

Spicy bun recipe- Soft, delicious and flavorful iyengar bakery style khara buns are a top favorite in south India. You can bake these buns very easily at home and customize as you like. Serve these spicy buns or or warm as snack wit tea or in breakfast with some salted butter!

Ingredients

  • 1 cup all purpose flour
  • 1 teaspoon instant dry yeast
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 3 tablespoons salted soft butter
  • 2 tablespoons chopped coriander leaves
  • 3 green chilies finely chopped
  • 1 big onion finely chopped
  • 20 curry leaves chopped
  • 1 teaspoon chili flakes
  • water as needed

Instructions

  • In a bowl combine flour, yeast, salt and sugar. Mix well with a dry spoon.
  • Add soft butter, cumin seeds, chopped curry leaves, coriander leaves, green chilies and onions. Mix well.
  • Add water and make a soft dough. Knead well for 5-7 minutes. Keep covered for the dough to raise.
  • After first raise the dough should have doubled in volume. It will take around 60-90 minutes.
  • Divide the dough into 8 equal parts and shape each part into ball.
  • Grease a baking tray and arrange the buns with space between them to raise. Keep the tray covered for 15 minutes for second raise.
  • In the mean time preheat oven at 180 C / 370 F. Place the tray inside the oven and bake for 15-18 minutes. The top should be hallow and golden brown in color.
  • Once done, brush the top with butter and serve warm.
