Tender Coconut Ice Cream
Ever tasted tender coconut ice cream from Natural’s? With this easy recipe you will recreate the same at home in no time. Just 5 ingredients, 10 minutes hands on time and there you have, the best ever tender coconut ice cream!
Servings: 15 scoops
- 1.5 cups tender coconut meat tightly packed
- 1 cup tender coconut water
- 1 cup fresh cream
- 400 grams sweetened condensed milk
Break open a tender coconut, collect the water and tender meat. Carefully collect the white meat discarding brown fiber.
To a blender jar add the coconut water and tender coconut meat.
Blend to a smooth puree.
Whip fresh cream in medium speed until soft peaks are formed.
Add the sweetened condensed milk and fold gently.
Finally add the coconut puree and mix gently. Add to a freezer safe box and freeze for 8-14 hours.
Scoop and serve tender coconut ice cream immediately.
Instead of low fat cream you can use heavy cream for more creamy ice cream
Use few drops of coconut extract for more flavor
