Ingredients

  • 1/2 cup powdered jaggery
  • 1/3 cup oil
  • 1 teaspoon vanilla extract
  • 1/2 cup almond flour
  • 3/4 cup whole wheat flour
  • 1/4 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 cup chocolate chunks or chocolate chips
  • 1/4 cup chopped almonds

Instructions

  • Preheat oven at 180 C/ 350 F. Line a large baking sheet with parchment or grease well and dust with a bit of flour.
Arrange on the prepared baking sheet and bake in the hot oven for 12-15 minutes.
Let the vegan chocolate cookies cool thoroughly before storing. Keeps well for a week at room temperature.
  • Combine powdered jaggery and oil in a bowl. You can use brown sugar or regular sugar in place of jaggery. Also add vanilla extract and mix well.
  • Sift almond flour, whole wheat flour, baking powder and cocoa powder over the mixed wet ingredients. Mix well
  • Add milk of choice and mix well. Add chocolate chunks and chopped almonds. Mix and make a dough. At this stage you can bake the cookies immediately or refrigerate the dough for 2 days or freeze for a month.
  • To bake the cookies pinch small balls from the dough. I used 1/2 tablespoon as measure for same sized cookies.
  • Flatten slightly and make patterns with fork if required.
  • Arrange on the prepared baking sheet and bake in the hot oven for 12-15 minutes.
  • Let the vegan chocolate cookies cool thoroughly before storing. Keeps well for a week at room temperature.
