Chocolate Chip Banana Bread Recipe (Vegan)

Ingredients

Wet Mixture

  • 2 large over ripe bananas 1.5 cups mashed bananas
  • 1/2 cup oil
  • 1/4 cup sugar
  • 1/4 cup milk almond, soy, light coconut or dairy
  • 2 teaspoons vanilla
  • 1 teaspoon cinnamon powder

Dry Mixture

  • 2 cups whole wheat flour
  • 1.5 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup chocolate chips more for topping

Instructions

  • Preheat oven at 180 C or 350 F. Grease and slightly dust a loaf pan or 7 inches round tin.
  • Add 2 large ripe bananas in a bowl and mash well. To that add 1/2 cup oil, 3/4 cup sugar, 1 teaspoon cinnamon powder and 2 teaspoons vanilla.
  • Using an electric beater or blender beat until well combined.
  • Add 2 cups wheat flour, 1.5 teaspoons baking powder and 1/2 teaspoon baking soda. Add salt.
  • Cut and fold the dry ingredients into the wet ingredients. Add 1/4 cup almond milk and adjust batter consistency.
  • Fold in the chocolate chips. I have also added 2 tablespoons desiccated coconut. Fold the batter gently.
  • Transfer to the baking loaf tin and top with more chocolate chips.
  • Bake in the preheated oven for 40-50 minutes or until a tester comes out clean.
  • Transfer to a wire rack and cool the bread before slicing.
  • Serve chocolate chip banana bread warm or at room temperature with coffee or tea.

Notes

  • This chocolate chip banana bread stays moist and nice for up to a week in refrigerator. As this is a fruit and oil based recipe, it stays good for sometime.
  • If you don’t have chocolate chip handy, you can still make this recipe. Add chopped chocolate if available or even chopped nuts.
  • You can use plain flour instead of wheat four.
