  • 3 large potatoes
  • water for soaking the potatoes
  • 2 tablespoons oil
  • 2 teaspoons dried herbs
  • 1 teaspoon chili flakes
  • salt to taste

  • Rinse, thoroughly scrub and peel the potatoes. Chop into thin sticks.
  • Soak the sliced sticks in cold water for 20-30 minutes.
  • Drain the water and rinse multiple times in cold water to remove maximum starch.
  • Spread on a clean cloth or plate and let dry for 20 minutes.
  • Preheat your oven at 190C or 375 F for 15 minutes.
  • Add the dried potato sticks into a bowl.
  • Throw in your desired seasoning and salt. I have used chili flakes, salt dried Italian herbs.
  • Toss well and add 2 teaspoons olive oil or any oil that you prefer.
  • Spread in a baking sheet as single layer.
  • Bake for 20 minutes.
  • Increase the oven temperature to 220 C / 425 F and bake for another 15-20 minutes to crisp up the fries.
  • Serve oven baked french fries warm with ketchup or sour cream dip or ranch dressing.

  • Use potatoes with high starch content for making crispier fries. Russet or idaho is best for this recipe.
  • Vary the seasoning as per preference.
