Crispy Smashed Potatoes

Smashed potatoes are easy to make snack or side dish with tiny potatoes. Parboiled potatoes are seasoned, smashed and baked to crispy perfection. You will love these as side dish or snack with any creamy dip. Vegan and gluten free.

Ingredients

  • 16 Oz potatoes red potatoes or yellow potatoes, tiny
  • 3 tablespoons olive oil
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon ground turmeric
  • 3 tablespoons vegan melted butter for brushing
  • 1 teaspoon salt
  • 2 tablespoons chopped cilantro leaves
  • lemon wedges to serve

Instructions

  • Pick and rinse the tiny potatoes well. Using a vegetable scrubber or brush clean any mid or dirt by scrubbing them thoroughly.

  • Place potatoes in a deep pot and add water to it. Add a big pinch of salt and bring the water to a boil over high heat. Cook the potatoes until they are just fork tender for about 10-12 minutes.

  • Once done, drain excess water in a large colander and spread the par boiled potatoes on a clean towel to remove some more moisture. Also let them cool for 5 minutes. In the meanwhile preheat the oven at 425 F. Also brush a large rimmed baking sheet olive oil generously. You may need around 3-4 teaspoons. In a small bowl combine olive oil, red chili powder and salt well to make the seasoning mixture.

  • Now let’s get smashing the potatoes. Smash the potatoes well using a potato masher or a fork or the heel of your palm. We are looking to smash them while keeping the base intact, do not make them pieces. Next dip each smashed potato into the prepared seasoning well so that seasoning enters crooks of the vegetable nicely. This step will make the potatoes way more flavorful that tossing them in seasoning or just spreading the season over the lined potatoes.

  • Once seasoned place the potatoes on the prepared baking sheet. Do not line the tray with parchment paper. Now pop the tray into oven and bake the potatoes until are crispy at the edges and color turns to golden brown. It will take around 25-35 minutes.

  • Once done, remove from oven and brush melted butter on crispy smashed potatoes immediately. You can also sprinkle some freshly ground black pepper all over. Sprinkle chopped herbs and serve immediately with dips like mayonnaise or sour cream or as side dish with any meal.

Notes

Be gentle while smashing the potatoes. You have to flatten them yet retain them full. Do not break into pieces.
You can easily double or halve the recipe.
