  • 2 1/2 cups cooked and cooled rice
  • 2 teaspoons oil
  • Salt
  • For lemon rice tempering:
  • 2 teaspoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal
  • 1 tablespoon chana dal
  • 2 tablespoons peanuts
  • 6-7 cashews broken
  • 15 curry leaves
  • 3-4 green chilies chopped
  • 1/4 teaspoon asafoetida
  • 1/2 teaspoon turmeric powder
  • 2 tablespoons lemon or lime juice


  • How to make lemon rice recipe with step by step photos.
  • Cook and cool the rice thoroughly.
  • Add 2 teaspoons oil, required salt and mix well. Set aside.
  • Heat 2 teaspoons oil in a pan. Temper with mustard seeds, urad dal, chana dal and asafoetida.
  • Add curry leaves, minced ginger, chopped green chilies, cashews and peanuts. Also add turmeric powder. Saute well till cashews turn golden.
  • Remove from flame and let cool for 2-3 minutes.
  • Add lemon juice and mix well.
  • Add this to the cooled rice and mix well. Serve lemon rice with chips or pickle.
