Ingredients

  • 1/2 cup rice flour
  • 1 tablespoon urad dal flour
  • 1/4 cup grated jaggery tightly packed
  • 1 teaspoon sesame seeds
  • 1 tablespoon coconut bits
  • 2 teaspoon soft butter
  • Oil for deep frying

Instructions

  • Dry roast urad dal, cool and grind to a fine powder. Sieve once, measure and set aside.
  • Dry roast rice flour till nice aroma wafts out, if you draw a line with the flour it should not break.
  • Grate and measure jaggery.
  • Take it in vessel and ad just 3-4 tablespoons water. Set it to boil Mix well and make a thick syrup. Do not make one string consistency, just a syrup.
  • Filter the jaggery syrup.
  • Take the rice flour,urad dal flour, sesame seeds, coconut pieces, butter in a mixing bowl. Add jaggery syrup and knead to soft and pliable dough. You may need to add 2-3 tablespoons of water for the dough.
  • Make seedais by pinching pebble sized balls from the dough. Arrange in a clean plate or cloth. Fan dry for 15 minutes.
  • Heat oil for deep frying.
  • Slide the shaped seedais and deep fry in low flame till it turns dark brown. Store vella seedai in airtight containers.

Notes

1. Make sure you roll the seedais as smooth as possible, else due to cracks it will break while frying, cracks in vella seedai are normal though.
2. Coconut is optional.
