For coriander paste

  • 1/2 cup coriander leaves
  • 1/4 cup mint leaves
  • 1/2 inch ginger peeled
  • 2 green chilies

To make coriander rice

  • 1 cup raw rice
  • 1/4 cup chopped carrots
  • 1/4 cup chopped bell peppers
  • 1 small onion chopped
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon urad dal
  • 1 teaspoon mustard seeds
  • 2 tablespoons oil
  • Salt to taste


To make coriander paste

  • wash the cilantro ad mint leaves thoroughly. Take the washed leaves, 1/2 inch ginger,peeled, 2 green chillies in a mixer jar. First run the mixer without any water, once coarsely ground, add very little water and grind to a smooth paste. Remove to bowl and set aside.

To make coriander rice

  • Wash, soak and cook the rice. Cool thoroughly. You can by all means use left over rice.
  • Heat oil in a pan. Temper with mustard seeds and urad dal.
  • Add finely chopped onions and saute till color changes.
  • Add chopped carrots and bell peppers. saute till the vegetables turn soft.
  •  Add the pureed cilantro-ginger paste and mix well. Cook for few minutes.
  • Add salt, turmeric powder, chilli powder and mix well.  Cook further.
  • Cook till raw smell goes off and the masala is thick.
  • Add cold rice and mix gently. Serve cilantro rice with curd.
