Though I am not a big fan of this confectionery my husband and daughter like this and they have it from Dunkin donuts once in a while. I always wondered what is so special about donuts. Then my husband asked why don’t you try homemade donuts and then it occurred to me I should make it. Once I was all set to make donuts recipe at home I read a bit about them. There were many variations with donuts recipe. Basically donuts are yeast flour based confectionery with eggs. Authentically donuts are fried and glazed but baked donuts are also quiet popular. This is a basic donuts recipe I am sharing here today. These are not filled donuts or any fancy ones. I made two different glaze for my donuts. regular sugar glaze and a nutella glaze. I used nuts, sprinkles and colored vermicelli to decorate the donuts. We just loved the way the donuts turned out. They were so crispy and fresh from outside, very very soft and spongy from inside, not overly sweet with glaze adding a brilliant shine and flavor. Nothing like you get in shops. If you love donuts I seriously urge you to try this homemade donuts recipe. The dough was bit difficult to handle for me. Doughnut dough is more soft and sticky than any bread dough. Some of my donuts squished and shaped changed while I tried to transfer the shaped ones to frying pan. So it is very important to handle to doughnuts nut very gently. As I said above this an eggless donuts recipe with curd replacing egg.
To make donuts recipe you need all purpose flour, butter, milk, yeast, curd and sugar. You can also use self raising flour. I have used a pinch of baking soda. With self raising flour no soda should be added. I have added curd in this dough, you can just replace it with water too if you wish. Butter is the important ingredient here and not be missed.
Serve donuts fresh and warm for best taste and flavor. You can keep them for a day or 2 in fridge but I vote for freshly made donuts.

Step by step donuts recipe.
1. Add 4 tablespoons sugar in 1/2 cup lukewarm milk. Mix well. Sprinkle 3/4 tablespoon active dry yeast over it and set aside for 15 minutes.
2. The yeast will turn frothy. If the yeast doesn’t turn bubbly it is better to start with a fresh batch of yeast. Now to the frothy milk add the following ingredients. 2 cups all purpose flour, 1/8 teaspoon baking soda, 4 tablespoons soft butter, 4 tablespoons curd, 1/2 teaspoon vanilla extract.
3. Mix well with a wooden spoon.
4. Once everything comes together start kneading. Knead very well for 5-7 minutes. The dough should very smooth and supple. The dough will be a bit sticky, do not add more flour. Rub some butter in palms and knead to a soft dough. Set aside for 1.5 hours until the dough doubles in volume.
5. Once the dough is doubled divide it 2 equal parts.
6. Take one dough ball and roll it into a thick circle.
7. Use a round cookie cutter or a sharp lid and cut circles. Using another small lid make a hole in the center of each round. Repeat the same with all the dough.
8. Arrange the shaped donuts gently on a tray. Cover with a cloth and let it rise for 30 minutes.
9. Now you can either fry or bake the donuts.
10. For deep frying heat oil in a kadai. Gently slide 2-3 donuts at a time and deep fry until golden brown. Remove to a tissue and set aside.
11. For baking preheat oven at 170C. Bake the arranged donuts for 15-18 minutes until it turns golden brown and puffy.
13 Now the donuts are ready lets make the glaze. Take powdered sugar in a small bowl. Add 1/2 teaspoon vanilla extract, melted butter and milk. Mix very well. Dip each donut into the glaze and dust in sprinkles or nuts of your choice.
14. For making nutella glaze, take nutella in a small bowl. Add melted butter and mix well. Dip the donut in nutella glaze and dust in sprinkles.
15. Arrange in a tray and serve glazed donuts warm.

2. The dough should be very soft and a bit sticky. Only then donuts will puff up while frying.
3.You can use your choice of toppings for decoration. You can serve plain lazed donuts too.
4. Be very gentle while handling shaped donuts.
