Dahi Bhindi recipe is a tasty and easy dish made with bhindi from north Indian cuisine. Slightly sauteed okra are simmered in a mildly spiced, tangy and flavorful yogurt gravy. This dahi wali bhindi goes especially well with roti or naan and jeera rice.
Today I am sharing with you all this delicious recipe of dahi bhindi with video and step by step photos. We love yogurt based dished at our home and so I make this dahi wali bhindi very often. Fresh and tender okras are best used in this recipe.
Because of yogurt the gravy is slightly tangy. Also adding curd tames down the spice and as a result this dahi bhindi is mildly spiced gravy suitable for kids also. Though I make this okra in yogurt gravy on any given season, this yogurt gravy is especially an excellent side dish during summer months.
Bhindi is the hindi name for okra or ladies finger. It is an excellent healthy vegetable very widely used in Indian cuisine. Bhindi is rich in magnesium and vitamins.
It blends beautifully in Indian and international cuisine. The most dreaded okra slime can be easily removed especially if we select fresh tender okra for cooking.
For making dhai bhindi or any other okra recipe select small and tender okras that are bright with no spots. the tails of tender okra snap easily. They are less fibrous, more tasty and easy to handle also.
Now there are many variations with dahi bhindi recipe. Here I have made the gravy as we make in paneer butter masala. To the makhani gravy I have added dahi towards the end. I have been making this for quite sometime and this version is our favorite also. There is one more variaition of dahi wali bhindi made in Hyderabad style. I will try to share that also here.
some tips for making dahi bhindi:
1. Make sure the curd/yogurt is very fresh and smooth. The curd should be well whisked to avoid curdling.
2. Make sure to mix the curd with tomato gravy in lowest flame. The curd will initially not get mixed well. keep mixing and the gravy will be smooth.
3. Here I have sauteed the bhindi in 1 tablespoon oil. You can also deep fry them as an option.
You can serve dahi bhindi with butter naan, jeera rice, roti or steamed basmati rice also.

How to make dahi bhindi recipe (step by step)
1. First of all puree 2 chopped tomatoes and 10 cashews into a smooth paste. Set aside.
2. Heat oil in a pan. Once the oil is medium hot add the chopped okra pieces. Saute in high flame continuously for 4 minutes. Saute until the okra pieces slightly char and wilt. Sauteing in high flame helps in reducing the okra slime. Remove the sauteed bhindi to a plate.
3. In the same oil temper cumin seeds. Add crushed ginger garlic and saute till raw smell goes off.
4. Add chopped onions and saute till it turns soft.
5. Now add the tomato paste and mix well.
6. Next we add the spice powders and chili powder. Add cumin powder, garam masala powder, coriander powder, turmeric powder and chilli powder.
7. Saute well till the spice powders blend well with tomato paste and fat is released from sides.
8. Now add 1 cup water. You can add water to the mixer jar you used to make tomato paste and use that. Mix well and simmer for 7-8 minutes.
9. Reduce the flame to lowest. Add well whisked curd and keep stirring continuously until very well combined.
10. Add 1/2 cup water and also season with salt. Mix well and simmer for 5 minutes.
11. Then sauteed okra pieces and mix gently. Simmer for a minute or two.
12. Now add some fresh cream if desired. Mix well. Finally add crushed kasuri methi and mix well. Serve dahi bhindi hot or warm.

1 CUP = 250 ml
Ingredients
Preparing okra for dahi bhindi
- 200 grams okra fresh and tender
- 1 tablespoon oil
For tomato paste
- 2 tomatoes ripe and big
- 10 cashews
For dahi bhindi curry
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 1 teaspoon ginger garlic paste
- 1 onion chopped
- 1 teaspoon coriander powder
- 1 teaspoon garam masala powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon chili powder
- 1/2 teaspoon roasted cumin powder
- 1/3 cup yogurt fresh and smooth
- 2 teaspoons fresh cream
- 1 teaspoon kasuri methi
- Salt to taste
