Gluten free vegetable muffin recipe with step by step photos. I am getting requests for gluten free baking recipes since many days. Though I like to bake and passionate about trying new recipes, I am just a beginner at baking. I have seen savory veggie muffins in many sites and always wanted to try one. Then I thought of making it gluten free by using gram flour and rice flour. I had backup plans for this, I decided to try baking one batch and if it does not turn well I thought of making cheelas out of them :). Luckily the muffins turned out very well and we all liked it. These cheese topped muffins were so good, soft and flavorful.
To make these vegetable muffins recipe, I have used gram flour, rice flour, curd and baking powder. Veggies used are carrots, tomatoes, onions and sweet corn. I have topped the muffins with pizza cheese and if you prefer you can leave out the cheese too.
Serve veggie muffins warm with coffee

If you do not have oven you can use appe pan to make small paniyaram or even make small pancakes in tava.
Step by step gluten free muffin recipe
1.First finely chop the veggies. I used a food processor to chop the veggies. Preheat oven at 180C
2. Take gram flour, rice flour, salt and baking powder in a mixing bowl. Mix well. Add the chopped vegetables and mix well. Add curd and whisk well. Now add about 1/4 cup water and mix well. The batter should be of pancake batter consistency.
3.Grease a muffin tin very well. Pour the prepared batter in each mould. Top with grated cheese.
4. Bake till the cheese melts and turns slightly golden. I baked for 18 minutes. Let cool for 5 minutes and serve veg muffins warm.

1 CUP = 250 ml
Ingredients
- 1 cup very finely chopped veggies

- 1/2 cup rice flour
- 1 teaspoon minced ginger
- 2 green chilies
- 1 teaspoon baking powder
- Salt
- 6-7 tablespoons curd
- Grated cheese optional
- Oil for greasing

Notes
2. If you wish you can saute the veggies in oil for 5 minutes before adding the flours.
