Idiyappam is a quintessential breakfast recipe of Taml nadu. It is one of the best breakfast recipes I would rate. Almost no oil, steamed, low fat, low cals yet so satsifying and filling. Crumbled idiyappam is know an sevai and there are again tons of ways you can flavor sevai. I like to make plain idiyappam and hotel style kurma for breakfast. Making rice flour for idiyappam at home may take some time, but with good quality store bought rice flour, you can make it in no time at home.
To make idiyappam recipe at home we need just 4 ingredients. Rice flour, salt, oil and water. The quantity and temperature of water plays the key role in making idiyappam recipe. The water should just begin to boil with some bubbles. Do not let the water rolling boil. Softness of string hoppers is directly proportional to the quality of flour used.
Serve idiyappam hot with any kurma,vadacurry and coconut milk.

1 CUP = 250 ml
Ingredients
- 1 cup fine rice flour idiyappam/murukku flour
- 1 1/8 cup water
- 1/2 teaspoon oil
- Salt
Instructions
- Bring 1 1/8 cup water to a very gentle boil.
- Add the measured flour, salt and 1/2 teaspoon oil to it. Mix with a spoon.
- Once all the water is absorbed knead gently to make a soft dough. Divide the dough into two oblongs, Use your murukku or chakli press with finest holes plate for making idiyappam. Place one part dough in the greased press.
- Grease the idli plates and press the dough into small circles over the plates. Steam like idlis for 4-5 minutes. They get cooked really fast. Leave to rest for 2 minutes, remove from plate and serve idiyappam hot with kurma.
Notes
2. If the dough breaks while piping, add little warm water, knead and pipe again.
3. Keep them covered until serving to retain softness.
