Today I am sharing a signature podi recipe from Andra. As you all know Andra is very famous for its spicy podis and pachadis. I just love the array of podis served in Andra restaurants. I first tasted this nalla karam podi in our office cafeteria Andra meals. I was searching for a good nalla karam podi recipe when I started cooking and finally got one from a friend. Nalla karam podi recipe is very very simple to make but it is very flavorful. The flavors are so potent and complex that it will literally leave you craving for more.
Nalla karam podi has a pronounced flavor and taste of coriander seeds. The proportion of coriander seeds is more compared to other ingredients. Next star ingredient in nalla karam podi recipe is urad dal with husk or whole black gram. Use whole black gram for authentic taste and flavor. Raw garlic is used in this recipe to give a unique flavor and taste.You can decrease the number of garlic cloves if you wish. I have used very less number of garlic clove here.
To make nalla karam podi I have used gingely oil. I prefer to use gingely oil for making any podi and pickles. The taste is good also it offsets the heat produced by chilies.
Serve nalla karam podi with rice and ghee. This can also be served with idli or dosa.

Step by step nalla karam podi recipe.
1. Heat 3 teaspoons oil in a pan. Add coriander seeds and fry until golden brown. Fry on low flame to avoid burning. Remove to a plate.
2. In the same oil add channa dal and black urad dal. Fry until golden brown. Remove to the plate along with coriander seeds.
3. In the same oil add dried red chilies and curry leaves. Fry until the chilies turn slightly dark. Remove to the same plate.
4. Switch off the flame. Add tamarind to the hot kadai and saute well.
5. Let all the ingredients cool to room temperature.
6. Take all the ingredients in a mixer jar. Add minced garlic and salt. grind to a coarse powder. Mix very well and store in a air tight container. Serve nalla karam podi with rice or idli.

- 3 tablespoons channa dal
- 15-20 dried red chilies
- 30 curry leaves
- small lemon sized tamarind
- 6-7 garlic cloves
- salt
- oil
Instructions
