Easy to make flavorful and delicious paneer pulao recipe with optional vegetables.I am getting requests to share some easy paneer recipes here and no wonder, paneer is even loved by toddlers and kids, we cannot have enough paneer recipes ever. I personally love to cook with paneer, it is so versatile and can be incorporated in desserts, main course and side dish as well. I cook with paneer very often and there are few easy paneer recipes here.

Pulao recipes are also a home favorite for their ease to make and they are a wholesome one pot meal. Just we need a raita to go with any pulao as side dish. I have shared easy veg pulao in pressure cooker, peas pulao recipes here too.

Coming to this paneer pulao recipe, it is a very mildly spiced pulao with some added vegetables. There is no other spice powder used in this paneer pulao recipe other than crushed ginger garlic and some pepper powder. You can serve this paneer pulao to toddlers and kids too, loaded with paneer and veggies, very mildly spiced, this is very palatable for them.

I generally make two rice varieties with paneer. One is this mildly spiced paneer pulao recipe and other one is a spicy paneer biryani with whole spices, curd etc. Both these rice recipes are absolutely delicious and will earn you rave reviews for sure :).

To make paneer pulao recipe, I generally cook and cool the rice first thoroughly, you can even make the whole recipe in the pressure cooker. I add vegetables like carrot, capsicum and baby corns. You can even add peas, sweet corn etc. It is best to use basmati rice in this recipe, the elegant flavor of basmati rice compliments the paneer very well.

Serve paneer pulao with raita and a veggie salad. You can cool it slightly and pack in tiffin too.

Paneer pulao recipe with step by step photos.

1. Wash,soak for 20 minutes and drain the 1/2 cup basmati rice. Cook with 1 1/4 cup water. Cool thoroughly and fluff the rice.

2. Heat a thick pan and add 2 tablespoons oil. Add cumin seeds and let crackle. Add crushed green chilies and ginger. saute well. Add finely sliced onions and saute well till the color changes.

3. Add a handful of washed methi leaves and saute till it wilts. Add chopped vegetables and mix well. Saute well till the veggies soften a bit.

4. Add salt,pepper powder and mix well.Cook the vegetables for 5-7 minutes. In the mean while heat a tava and add 1 teaspoon ghee. toast the paneer cubes until slight golden from all the sides.Set aside. You can keep the fried paneer cubes in very hot water until use.

5. By now the veggies will be cooked, add the cooked rice and mix very gently.Adjust seasoning.

6. Add the paneer cubes and mix well. Serve paneer pulao hot or pack in tiffin.

Vegan option

1. Use tofu cubes instead of paneer.

2. Use oil instead of ghee.

Ingredients
  

  • 1 cup basmati rice
  • 1.25 cups panner cut into small cubes
  • 1 large carrot peeled and finely chopped
  • 3 baby corns finely chopped
  • 1/2 green bell pepper finely chopped
  • 2 green chilies + 1" inch ginger crushed together.
  • 1/2 teaspoon pepper powder
  • Salt
  • 2 tablespoons oil
  • 1 teaspoon ghee

Notes

1. You can make the whole recipe in pressure cooker. Saute the veggies in a pressure cooker, add raw rice and pressure cooker. Mix the paneer pieces before serving.
2. You can add white pepper powder for even mild flavor.
3. Increase the number of green chilies as per preference.
