Potato sandwich or aloo sandwich is a quick, delicious and easy to make breakfast or snack recipe that toddlers and kids will love. It is a vegan recipe, I have used vegan butter and can be made within 30 minutes. You can easily use any leftover potato curry and make this sandwich in 10 minutes!

Ingredients
6bread slices
2teaspoonsoilor butter
For potato filling
400gramspotatoesboiled,peeled and mashed.
1/2cupgreen peas
1/2teaspooncumin powder
1/2teaspoonpepper powder
1/2teaspoonturmeric powder
1/4teaspoonchaat masala powder
Salt
1/2teaspoonscumin seeds
2teaspoonsoil
Instructions
To make potato filling:
Boil,peel and mash the potato well.
Heat a pan and add 2 teaspoons oil.
Add cumin seeds and let them crackle. Add peas and mix well. Saute for few minutes
Add mashed potato, salt and all the spice powders, Mix well and cook for 4 minutes.
To Make Sandwich
Take the bread slices and trim the edges. Apply oil or butter on the bread slices
Place 2-3 tablespoons of prepared potato filling on one bread slice. Cover with another slice.
Toast the in a sandwich maker or tava until crisp. Serve potato sandwich hot or pack in tiffin
Notes
1. You can use the edges of the bread for making bread crumbs. 2. You can add ginger garlic in the filling.
