Sweet corn clear soup recipe, quick and easy to make light sweet corn clear soup loaded with veggies

3/4cupsweet corn kernels
1/8cupfinely chopped carrots
1/8finely chopped beans
2tablespoonsfinely chopped spring onion whites
2tablespoonsfinely chopped spring onion greens
1tablespoonolive oil/ butter
Heat 1 tablespoon olive oil or butter in a pan. Add chopped spring onion whites and saute for a minute. Do not let it brown.
Add finely chopped vegetables along with sweet corn kernels. Saute well for 3-4 minutes.
Add 2 1/2 cups water. Bring it to a boil. Cover and cook for 10 minutes till the veggies turn slightly soft. Do not let the vegetables turn mushy. Mix 2-3 teaspoon corn flour in 1/4 cup water without any lumps.
Once the veggies are cooked yet crunchy add the sweet corn slurry to the boiling soup. Mix very well.
Simmer for 5-6 minutes. Once the soup starts to thicken add salt, sugar and pepper powder.
Simmer for 5 more minutes. Add spring onion greens and mix well. Serve sweet corn clear soup hot.
1. You can add finely chopped cabbage and baby corns. 2. Adjust seasoning as per you taste. 3.Serve soup immediately as it thickens more on cooling.
