Step by step sweet corn clear soup recipe.
1. Heat 1 tablespoon olive oil or butter in a pan. Add chopped spring onion whites and saute for a minute. Do not let it brown.
2. Add finely chopped vegetables along with sweet corn kernels. Saute well for 3-4 minutes.
3. Add 2 1/2 cups water. Bring it to a boil. Cover and cook for 10 minutes till the veggies turn slightly soft. Do not let the vegetables turn mushy. Mix 2-3 teaspoon corn flour in 1/4 cup water without any lumps.
4. Once the veggies are cooked yet crunchy add the sweet corn slurry to the boiling soup. Mix very well.
5. Simmer for 5-6 minutes. Once the soup starts to thicken add salt, sugar and pepper powder.
6. Simmer for 5 more minutes. Add spring onion greens and mix well. Serve sweet corn clear soup hot.
