  • 2 cups rice flakes/aval/poha
  • 1/2 cup curd /plain yogurt
  • 1/2 teaspoon fruit salt
  • Salt
  • For seasoning:
  • 2 teaspoons oil
  • 1/4 cup chopped carrots
  • 1/4 cup chopped peas
  • 1 teaspoon mustard seeds
  • 1 teaspoon urad dal
  • 1 teaspoon channa dal
  • 10 curry leaves


  • Dry roast poha in a hot pan for 3-4 minutes. It should waft out nice aroma. Allow to cool and then pulse to get poha rava.
  • Heat 2 teaspoons oil in a kadai. Add mustard seeds and let in pop. Add urad dal, channa dal, curry leaves, cashews and saute well. Next add veggies if you like. Saute for 2-3 minutes. Allow this to cool completely.
  • Once cool add the seasoned veggies along with the oil to the pulsed poha. Mix ery well. Add salt, curd and mix well. Add enough water to get idli batter consistency.
  • Just before steaming add fruit salt.
  • Spoon in the prepared batter in greased idli moulds. Steam for 10-12 minutes.
  • Once done allow to cool for 5 minutes before removing the idlis. Serve poha idli hot with chutney or sambar


1. Use slightly sour curd for best results.
2. You can let the batter sit for 1 hour and then steam to avoid fruit salt.
3. You can omit veggies and make plain idli without seasoning too.
