HEALTHY OATS KHICHDI RECIPE

Ingredients

  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1/2 inch minced ginger
  • 2 cloves garlic peeled and minced
  • 10 curry leaves
  • 1 onion finely chopped
  • 1/2 cup chopped carrots
  • 1/2 cup green peas
  • 1/2 cup chopped beans
  • 1/2 cup corn kernels
  • 1/2 cup moong dal
  • 1 cup rolled oats or quick cooking oats
  • 3 cups water
  • salt to taste
  • 1/2 teaspoon turmeric powder
  • 2 tablespoons coriander leaves

Instructions

  • Heat 2 tablespoons oil in a pressure cooker. Temper with cumin seeds, minced ginger garlic, curry leaves. Add chopped onions and saute well.
  • Next add the chopped mix vegetables and saute well.
  • Add measured and rinsed moong dal and oats. Mix well.
  • Add water and season with salt and turmeric powder. Close the lid and pressure cook for 4-6 whistles. Once done add chopped cilantro leaves and lemon juice. Mix well and serve hot.
