Strawberry Muffins Recipe

Servings: 12 muffins
- 1 cup strawberries chopped
- 1 teaspoon plain flour
- 1/2 cup light olive oil
- 3/4 cup sugar
- 2 teaspoons pure vanilla extract
- 1 cup yogurt
- 2 cups plain flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
Preheat oven to 180 C or 350 F. Line a muffin tray with paper liners.
Wash and hull the strawberries. Chop them finely and sprinkle 1 teaspoon flour over them. Toss and set aside.
Now sift plain flour, baking soda, baking powder, salt over the wet ingredients and mix well. Do not over mix the batter.
Now add the strawberries and mix. Spoon in the batter into muffin liners and bake for 18-22 minutes.
Let cool for few minutes and serve strawberry muffins warm or at room temperature.
