Ingredients You Will Need
Fresh strawberries that are ripe, plump and sweet makes the best muffins. The sweeter the berries, less sugar you will need to add. You can also use frozen strawberries, just chop and add them in the batter. No need to thaw.
Yogurt or plain curd is added in good measure as this is an eggless muffin recipe. Curd or yogurt adds a wonderful texture to these muffins.
Sweetener & Flavoring
For this recipe, I have used organic unrefined cane sugar as in most of my recipes. You can also use regular granulated sugar, coconut sugar, jaggery powder for these muffins. I have also added a dash of vanilla extract for flavor.
For intense strawberry flavor you can also add few drops of strawberry extract.
We use oil in this strawberry muffins recipe instead of butter. Adding oil makes these muffins absolutely moist and soft. You can melted butter of same measure but the muffins will be a bit hard and dense. I have used light olive oil. You can use any oil with mild flavor.
You can use plain flour or all purpose flour as I did or whole wheat flour. If you are making this recipe for toddlers and kids as breakfast, I suggest you use whole wheat flour. You can even use mix of various grain flours.
Baking Powder & Baking Soda
As with most of the muffin recipes, here also we are using both baking soda & baking powder as leavening agents. It is important to use these ingredients for soft , light and fluffy muffins.

Preparing Batter For Strawberry Muffin
Preheat oven to 180 C or 350 F. Line a muffin tray with paper liners.
Wash and hull the strawberries. Chop them finely and sprinkle 1 teaspoon flour over them. Toss and set aside.
Combine oil and sugar in a large bowl. Whisk well until light.
Add yogurt and mix very well.
Now sift plain flour, baking soda, baking powder, salt over the wet ingredients and mix well. Do not over mix the batter.
Now add the strawberries and mix.
Making Strawberry Muffins
Spoon in the batter into muffin liners and bake for 18-22 minutes. You can also directly grease the muffin cups and spoon in the batter.
Let cool for few minutes and serve strawberry muffins warm or at room temperature. If you are planning to store for later cool the muffins in wire rack completely.
Vegan Strawberry Muffins
To make strawberry muffins vegan, just replace yogurt with any vegan yogurt like cashew curd or soy curd. You can use any yogurt like almond milk yogurt, coconut yogurt or artisanal yogurt too.
With Almonds or Walnuts
To add some texture to the muffins you can add finely chopped roasted almonds or walnuts to the batter. Add the nuts while tossing the berries to the batter to make more healthy strawberry muffins.
With Crumb Topping
Strawberry muffins tastes delicious with crumb topping. To make crumb topping combine 1/2 cup brown sugar with 2 tablespoons cold butter and mix well. Sprinkle this on the top of each muffins before baking & bake until they turn golden brown. You can also add 2 tablespoons finely chopped toasted almonds to the crumb mixture.
Gluten Free Strawberry Muffin
To make this recipe gluten free just replace the all purpose flour with any of your prefered gluten free blend like almond flour or spelt flour.
Serving & Storage
These egg free strawberry muffins stay good for 2-3 days in the refrigerator and can be frozen for a month. Just store them in suitable airtight containers and warm them gently for few minutes before serving.
This is an oil based recipe which means the muffins will stay soft even on refrigerating unlike butter based recipes.
You can serve these strawberry muffins as breakfast, snack or even as dessert with a scoop of ice cream.
Always Measure the ingredients precisely for a fail proof recipe. Flours should be leveled properly using a back of knife or spoon.
Do not miss to coat the strawberries in flour. If you add them directly they will sink to the bottom of the batter.
If you prefer a pronounced berry flavor, you can add few drops of berry extractoto the batter.
