Ingredients
250gramswatermelonpeeled, chopped and chilled
1/4cupsimple syrupor 4 tablespoons fine sugar
15mint leaves
1/3cuplime juice
2cupssoda water
ice cubesas required
Instructions
Cut the watermelon in big cubes first. I like to chill the chopped watermelon for an hour before making mojitos. Also chill the simple syrup if you are using it.
Combine mint leaves and simple syrup in a bowl. Muddle well for a minute. Muddling releases all the flavors of mint leaves.
Next place the roughly chopped chilled melon cubes in a blender jar and blend until very smooth. Strain the juice to remove any seeds and pith. Add the watermelon juice to the muddled mint and sugar syrup. Mint and watermelon should combine well. If you are adding alcohol, add watermelon juice and rum together.
Add lime juice, soda and ice cubes. Mix well.
Transfer watermelon mojito in serving glasses. Add more ice cubes, some lime rinds and torn mint leaves. Serve immediately.
