I always make it as mocktail but according to my friend who is very passionate about making cocktails at home vouches for white rum or vodka in this. I however always use club soda and sometimes tender coconut water too.

What is a watermelon mojito?
Mojito is a cuban drink with white rum. It is a refreshing mix of lime juice, ice cubes, rum, soda water and mint leaves. In this watermelon mojito fresh watermelon juice is added along with other ingredients.
This drink has a come a long way and now available in various flavors by using fruit syrups or fresh fruit juices. Strawberry mojito, pineapple mojito, mango mojito are few popular ones just like this watermelon mojito.
In this recipe fresh watermelon puree or juice is mixed with muddled mint leaves, lemon juice, club soda and served chilled. This is the basic non-alcoholic version but alcohol like rum or vodka can be added.
I always add few finely chopped watermelon pieces before serving. You can also add mango cubes, strawberry, cherry or even chopped pineapple for flavor and texture.
You can serve this on the rocks or add just few ice cubes before serving. It is a very refreshing drink that will be wonderful with nibblers too.

Ingredients You Will Need
Watermelon– Use the juice of fresh ripe and sweet watermelon for best tasting mojito. Please check this watermelon strawberry smoothie to learn how to pick a best watermelon.
The fruit should be heavy for its weight, hallow when you tap with white or yellow splotch. This indicates the sweetness.
I suggest you chop and chill or freeze the chopped fruit for an hour for chilled mojito. Also make sure the soda water is also cold.
Simple syrup– It is a mix of equal parts of sugar and water mixed and boiled until thick and slightly sticky. I had some leftover sugar syrup so used it. You can just use powdered sugar and muddle it with mint leaves.
Mint leaves– It is one of the important ingredients for a classic mojito recipe. If fresh mint leaves are not available you can also use fresh basil leaves for this watermelon mojito.
Lime juice– it adds a wonderful tangy taste and refreshing flavor to this mojito. You can also add lemon juice for less tangy sweeter taste.
Soda– I like to add club soda or soda water in mojito recipes instead of water. It adds a wonderful fizzy feel and makes for very cool and refreshing mojito.
Alcohol– I have not added any alcohol in this drink but one of my friend suggests white rum tastes so good in this drink, do add if you like.
How To Make Watermelon Mojitos
Cut the watermelon in big cubes first. I like to chill the chopped watermelon for an hour before making mojitos. Also chill the simple syrup if you are using it.
Combine mint leaves and simple syrup in a bowl. Muddle well for a minute. Muddling releases all the flavors of mint leaves.
Next place the roughly chopped chilled melon cubes in a blender jar and blend until very smooth. Strain the juice to remove any seeds and pith.
Add the watermelon juice to the muddled mint and sugar syrup. Mint and watermelon should combine well. If you are adding alcohol, add watermelon juice and rum together.
Add lime juice, soda and ice cubes. Mix well.
Transfer watermelon mojito in serving glasses. Add more ice cubes, some lime rinds and torn mint leaves. Serve immediately.
Variations
You can add any alcohol like rum or vodka in this recipe to make watermelon mojito cocktail.
Instead of soda you can add just plain water especially for kids.
Another option is to add mild orange juice or coconut water.
While serving you can add finely chopped chilled watermelon cubes or strawberries or cherries.
You can also freeze watermelon juice in ice cube tray and use those ice cubes.
