- For sambar masala
- 6 pearl onions
- 1 small tomato chopped
- 2 tablespoons channa dal
- 2 teaspoons coriander seeds
- 1/2 cup grated coconut
- 1/4 teaspoon methi seeds
- 2 green chilies
- 2 dried red chilies
- 1/2 teaspoon black peppercorns
- 1 teaspoon oil
- To make sambar rice :
- 3/4 cup raw rice
- 1/4 cup toor dal/arhar dal
- 2 teaspoons thick tamarind juice extracted from small lemon sized tamarind.
- 1 1/2 cup cubed vegetables carrot, eggplant, broad beans, yellow pumpkin, beans, capsicum
- 15 pearl onions
- 10 curry leaves
- 1/2 teaspoon jaggery
- Salt
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 tablespoon ghee
To prepare sambar masala
Heat 2 teaspoons oil in a small pan. Add all the ingredients expect coconut and saute for 2-3 minutes.
Add grated coconut and saute for few seconds.
Grind to a smooth paste.
To make sambar sadham
Heat a pressure cooker base with 1 tablespoon ghee.
temper with mustard seeds, cumin seeds and curry leaves.
Add pearl onions and saute for few minutes.
Add the cubed vegetables and saute well.
Add the prepared sambar masala and mix well. Cook for 3-4 minutes.
Add the rinsed rice, dal and mix well. Season with salt. Add 4-5 cups water. Mix well and pressure cook for 6-7 whistles.
Once the pressure is released, mix well and top with more ghee if needed. Serve sambar rice immediately
