Sharing with you all a very favorite roti of mine today. Finger miet/ bajra/ kambu is a powerhouse of nutrition and very good for s. Kamb koozh is a very popular summer coolant here and tastes great with small onions and green chilies. I make this kambu koozh with both the millet and fur during summers.
One of my favorite way of including finger millet in our diet is this bajra roti. Bajra roti is a tasty way to consume healthy bajra and when served with a spicy curry and a dollop of butter, it is just great!
To make bajra roti recipe you need just three ingredients. Bajra flour sat and water. I generally do not add oil to the flour or while cooking. You can serve it ghee smeared or plain as per preference. Bajra roti recipe is a straight forward one but you need to gain some expertise to master it. Make small quantity of dough and try 2-3 rotis at a time during initial days. You can even mix art wheat flour and try making bajra roti recipe. Once you gain some experience you can move on to making bajra roti recipe with bajra four alone. Here I have spread the roti without rolling pin, that is just spreading the dough with hands. For me that is easier. Since bajra flour has no gluten, it is a bit difficult to handle.
Serve bajra roti with baingan bharta, bharli vangi etc. I personally like it with saag paneer.

Step by step bajra roti recipe.
1.Take bajra flour in a wide bowl. Add salt and mix well. Add water slowly and mix well. Mix well and knead well.
2. Pinch a big lemon sized portion from the dough and shape into a ball. Place it on a plastic sheet or butter paper and slowly press it and make a thin roti. Wet your fingers for easy spreading.
3. Now slowly and carefully place the rolled roti on a hot tava and cook in medium flame till brown spots appear and edges are well cooked on both sides. Smear ghee on both sides and serve bajra roti hot.

Yes you can but the taste may differ. I suggest you make with plain bajra flour. Just use banana leaf or parchment paper to pat the rotis with hand if yu cannot roll them using a pin.
