Brookies recipe is a delicious combination of brownies and cookies. These soft and chewy brookies are eggless and easy to bake especially!
Chocolate brookies also known as brownie cookies are basically a combination of brownies and cookies. They appear like cookie with crisp edges but taste absolutely like brownie once you bite. Cracked top, dense and with so fudge like texture they taste just like brownie. I was truly not expecting these brownie cookies to be this delicious 🙂
I made few changes to the recipe I referred. Also I added 2 tablespoons corn flour and some chopped walnuts. Adding walnuts made these brookies more tasty just like brownies. It is important to use good quality ingredients to get perfect brookies. The brownie cookies will taste like the chocolate you use use. So make sure to use good quality dark chocolate. If you can source 70% cocoa chocolate it would be really good.
To make brookies recipe we need dark chocolate, butter, chocolate chips, walnuts, milk, cornflour, flour, sugar, vanilla and baking powder. I have used unrefined cane sugar in this recipe.
Tips for making best brookies recipe.
- First of all do understand that these cookies spread enormously so make sure to place them well apart.
- Also grease the tray generously.
- Do not over bake the cookies.
- Furthermore do not wait for the brookies to turn crispy and hard in the oven. After 10 or 11 minutes they will be somewhat hard to touch and that is correct stage. The cookies harden on cooling. The center of the cookies will be more like fudge, dense and gooey only.
Store brookies in airtight container and serve as required
How to make brookies recipe with step by step photos.
1. Melt butter and broken chocolate squares together. Mix well to make a smooth ganache. Cool it completely.
2. To the chocolate ganache add flour, baking powder, corn flour, salt, sugar, chocolate chips and chopped walnut. Mix well.
3. Add as little milk as required and make a soft dough.
4. Grease a baking tray very well. Preheat oven at 175C.
5. Using a tablespoon scoop out dough and press slightly. Arrange on the greased baking sheet. Give enough spacing as cookies really spread a lot.
6. Press some chocolate chip and walnuts on each brookie. Bake for 8-12 minutes till the edges turn slightly crispy, the top cracks and the cookies turn slightly hard to touch. Do not bake for more than 12 minutes. Cool for 15 minutes before removing from tray. Serve brookies as snack.

- 350 grams dark chocolate chopped
- 50 grams butter
- 1/2 cup+ 1/2 cup chocolate chips
- 1/2 cup chopped walnuts
- 3/4 cup sugar
- 1 teaspoon baking powder
- 1/4-1/2 cup milk
- Vanilla
