Bruschetta recipe with step by step photos. Bruschetta is an easy to make Italian starter that suits for any party. It is a perfect one to serve with drinks too.

I tasted bruschetta with cherry tomatoes in a bistro and I loved it very much. I was hunting for baguette to make this bruschetta recipe. I the mean I made this bruschetta recipe many times with regular bread. When I made baguette recently I immediately made this bruschetta recipe the next day.

Bruschetta is basically grilled bread served with a garlic and olive oil topping. To make it more fancy cherry tomatoes and onions are used as topping. Read more about bruschetta here. I purchased cherry tomatoes and basil leaves just to make bruschetta recipe. Cherry tomatoes lend a nice sweet note to this starter and basil leaves improves the flavor by leaps and bounds. You can use normal tomatoes and cilantro leaves as well in this bruschetta recipe.

To make bruschetta recipe you can use baguette or even thick slices of garlic or normal bread. If using normal loaf try to get it sliced a bit thick. Here I have used cherry tomatoes, onions, basil leaves, chilies and some dried parsley. You can change the seasoning and toppings as per your taste. I have toast the bread in oven here. You can grill it, toast on stove top, also use sandwich maker to make bruschetta.

Serve bruschetta as starter or snack with any cold drink or tea.

Here is how to make bruschetta recipe with step by step photos.

 

Step by step bruschetta recipe.

1. Get your baguette or loaf cut into thick slices.

2. Rub some olive oil on both sides of bread slices and arrange in a baking tray. Toast in the preheated oven at 180C for 7 minutes.

3. In the mean time add in the halved cheery tomatoes, finely chopped onions, torn basil leaves and finely chopped green chilies to a mixing bowl. Add salt, dried parsley and 1 teaspoon olive oil. You can add chili flakes as well. Mix well and toss very well.

4. Take the toasted slices and spoon in the prepared topping on each slice.

5. Return back to the oven and bake for 5-7 more minutes till the bread turns olden brown and tomato wilts.

6. Serve bruschetta warm with tea or any chilled drink.

Ingredients
  

  • 10 baguette slices
  • 20 cherry tomatoes halved
  • 1 onion finely chopped
  • 2-3 green chilies finely chopped
  • 2 garlic cloves crushed
  • 6-7 basil leaves torn well
  • 1/2 teaspoon dried parsley
  • Salt
  • Olive oil

Instructions

Notes

1. You can use chopped regular tomato in place of cherry tomatoes.
2. Use dried herbs if you cannot find fresh basil leaves
