Coconut milk pulao recipe with step by step photos. A very mildly spiced easy veg pulao recipe with coconut milk instead of water. coconut milk pulao is an excellent one pot meal that you can make for parties, get together  etc. It will be rich yet mild and different from usual veg pulao recipe. In traditional veg pulao recipe water is used to cooked the rice unlike this coconut milk pulao recipe.

This is one of the best veg pulao recipe with a nice flavor from coconut milk. Pulao and mixed veg rice recipes are often made at home for lunch box. This coconut milk pulao will taste excellent with a raita and spicy veg fry. Here I have added vegetables in this coconut milk pulao. You can just leave out vegetables and make plain coconut milk pulao too. There is another variation in this recipe, south Indian coconut milk rice recipe.

To make veg pulao with coconut milk recipe, I have used carrots, peas and onions. You can use potatoes, cauliflower too. Fresh homemade coconut milk is best for this coconut milk pulao recipe.

How to make coconut milk pulao recipe with step by step photos

Heat 1 tablespoon oil in a pressure cooker base.
Add cumin seeds, bay leaf,cardamom, and cloves. Saute well.
Add slit green chilies and crushed ginger garlic. Saute well for 2 minutes

Add thinly sliced onions and saute for 2 minutes

Add the vegetables and mix well.

Add drained rice and saute for 2 more minutes

Now add the coconut milk, 1 cup water and required salt. Mix well and simmer for 5 minutes.

Pressure cook for 2 whistles. Once the pressure is released, fluff up and serve coconut milk pulao hot or warm

Ingredients
  

  • 1 1/4 cup basmati rice soaked for 30 minutes and drained
  • 1 cup thick coconut milk
  • 1 cup chopped mixed vegetables
  • 1 onion thinly sliced
  • 2 cloves
  • 2 cardamoms
  • 1 bay leaf
  • 2 green chilies
  • 1 teaspoon crushed ginger garlic
  • Salt
  • 1 tablespoon oil
  • 1 cup water

Instructions
 

  • Heat 1 tablespoon oil in a pressure cooker base.
  • Add cumin seeds, bay leaf,cardamom, and cloves. Saute well.
  • Add slit green chilies and crushed ginger garlic. Saute well for 2 minutes
  • Add thinly sliced onions and saute for 2 minutes
  • Add the vegetables and mix well.
  • Add drained rice and saute for 2 more minutes
  • Now add the coconut milk, 1 cup water and required salt. Mix well and simmer for 5 minutes.
  • Pressure cook for 2 whistles. Once the pressure is released, fluff up and serve coconut milk pulao hot or warm

Notes

1. you can reduce coconut milk by 1/4 cup for more mild flavor
2. veggies are optional
