Ingredients You Will Need
Tomatoes- Use ripe red tomatoes that are mildly sweet. You can use any variety here. Even canned tomatoes work well. You can blanch and puree or pulse the tomatoes if you prefer but I usually add the chopped tomatoes with juice.
Carrots- I like to add a good amount of carrots in this recipe. The color of my tomato sauce is a bit light and it is because of carrots. If you want a deep red color you can reduce the amount of carrots or add a small piece of beetroot. Carrots lend a wonderful flavor and mild sweet taste to the sauce.
Onions– Again onions add wonderful flavor and mild sweetness. You can even add spring onion bulbs for mild flavor.
Garlic– I have used just 4-6 garlic cloves as we like mild flavor You can even add a whole head for more flavor. You can also add some celery in this recipe.
Herbs– I have just used basil here. I used dried basil as the flavor is more concentrated. You can also use fresh leaves.
Step By Step Method Of Making Tomato Sauce
Heat 3 tablespoons olive oil in a pan.Add minced garlic cloves and saute for a minute. Do not brown the garlic cloves.
Next add cubed onions and saute for 3-4 minutes.
Add sliced carrots, chopped tomatoes and mix well. Saute for 4-5 minutes in open pan.
Add salt, chili flakes and sugar Mix well and mash the veggies well.
Continue to cook in open pan, mashing now and then for 8-12 minutes.
Now cover and simmer the sauce for 10-112 minutes.
Once the sauce is well cooked and reduced, add basil leaves and mix well. let cool thoroughly
Blend into a smooth or chunky sauce as preferred.
Store this easy tomato sauce in a clean jar and use as required.
Tips & Variations
You can use canned tomatoes instead of fresh tomatoes. Just add the whole tomatoes to the pan and crush as it cooks.
Vary the herbs to vary the flavor like rosemary, thyme as you like.
Use very good quality olive oil for best flavor.
This sauce keeps well for 2 weeks in refrigerator and freezes well for 2-3 months.

Ingredients
- 4 tablespoons olive oil
- 4-6 cloves garlic peeled and minced
- 1 cup chopped onions
- 1 cup chopped carrots peeled and chopped
- 3.5 cups chopped tomatoes
- 1 teaspoon sugar
- 2.5 teaspoons chili flakes
- 2 tablespoons dried basil or fresh basil leaves as needed
- salt to taste
Instructions
- Next add cubed onions and saute for 3-4 minutes.
- Add sliced carrots, chopped tomatoes and mix well. Saute for 4-5 minutes in open pan.
- Add salt, chili flakes and sugar Mix well and mash the veggies well.
