Breakfast cookies recipe with step by step photos. Super healthy and delicious eggless breakfast cookies that you can make ahead and sort breakfast for busy days. These cookies are wholesome, dense, nutritious and oh so delicious!
You can make breakfast cookies literally in a hundred ways. There are so many combinations and flavors out there and I would say this is just a base recipe for breakfast cookies.
In this recipe I have used a mix of various whole grain flours, oats, corn flakes and loads of nuts. Adding oats give a nice chewy texture to these cookies. You can vary the proportion of ingredients as per taste.
I have added ingredients that we like and what ever I had handy. Go through the variations I have given to make different flavors.
Variations with breakfast cookies recipe:
- You can use various millet flakes instead of corn flakes in this recipe
- You can easily leave out nutella in this recipe. I use homemade nutella so I prefer to keep it in the recipe.
- Also you can leave out nuts if you do not prefer them.
This eggless breakfast cookies are perfect finger food for kids. Also this is perfect for kid’s breakfast with a glass of milk.
This recipe yields 20 big dense and chunky cookies. You can double or halve the recipe.
Store breakfast cookies in airtight container and serve with coffee or milk.

How to make breakfast cookies (step by step)
First measure cornflakes and crush it slightly with your hand or rolling pin.Next measure oats.Mix both and dry roast till they turn crunchy and raw smell goes off.
Next measure almonds and dry roast till they turn fragrant. Crush or chop the almonds.
Preheat oven to 176C,grease and dust a baking sheet/cookie sheet.
Cream sugar and butter until light and creamy.Add oil and mix well
Next add the curd and mix well till uniform. Add the scrapped vanilla and mix well.
Add nutella and combine well,mix in the same direction until well mixed.
Sift all the flours along with baking powder,add to the wet ingredients.Mix well to form a soft and sticky dough.
Now add the crushed cornflakes,oats,almonds and raisins.Mix well.The dough will be sticky and soft. Do not add more flour.
Divide the dough into 20 big lemon sized balls and flatten very slightly.
Arrange in the greased baking sheet with enough space between each cookie,as they expand considerably while baking.
Bake for 15-17 minutes until the edges turn slightly dark and the cookies look a bit dry.
Cool in a wire rack before saving.
Serve with milk as breakfast or snack.

Eggless breakfast cookies recipe,how to make breakfast cookies | Eggless baking recipes
1 CUP = 250 ml
Ingredients
- 3/4 cup whole wheat flour
- 1/4 cup finger millet/ragi flour
- 1/4 cup all purpose flour
- 1/2 cup corn flakes
- 1/2 cup quick oats
- 1/3 cup almonds
- 1/3 cup raisins
- 1/4 cup nutella
- 1/2 cup curd
- 1/4 cup oil
- 2 tablespoons butter
- Vanilla
- 1/4 cup castor sugar
- 1 teaspoon baking powder
Instructions
- Dry roast cornflakes and oats.Crush them slightly and set aside.
- Dry roast almonds and crush them slight.
- Preheat oven to 176C,grease and dust a baking sheet/cookie sheet.

2.You can replace nutella with peanut butter or any other flavoring of your choice
3.You can add any other nuts,dry fruits in this recipe to make them more tasty and healthy
4.You can replace sugar with honey or cane sugar
