Many of you write to me asking for healthy snack recipes for toddlers and kids. Dry fruits and nuts are rich source of nutrients as most of us know. It may be difficult to serve nuts to fussy eaters and such tasty treats will do the job easily. This homemade energy bar is not only very healthy, also very very tasty. These energy bars are so dense in nutrition and a small piece goes long way. I followed how to make easy 3 ingredient energy bars at home recipe from the kitchn and made my change to it.
This homemade energy bar is an excellent dish to pack in snack box or a finger food during work out sessions.
To make homemade energy bar recipe I have used seedless dates, dried cranberries, dried cherries, almonds and pistachios. You can use raw nuts or briefly toast the nuts for more flavor. You can use any dry fruit and nuts of your choice. I have not used any fat like coconut oil or butter etc. It is really not needed.
Store the homemade energy bars at room temperature in an airtight container. It keeps well for a week. You can store it in fridge if you make double batch.
Serve with milk for filling wholesome snack.

Step by step homemade energy bar recipe
1.Combine all the ingredients in a food processor jar. Process well until all the ingredients break, get pulsed and comes together as a solid mass.
2. Now roll the soft ball between butter papers into a thick square of desired thickness. Refrigerate for 30 minutes.
3. Using a pizza cutter or sharp knife make bars. Store and serve homemade energy bars as required.

1 CUP = 250 ml
Ingredients
- 1 cup seedless dates or pitted dates
- 1/2 cup dried cranberries
- 1/2 cup dried cherries or blueberries
- 1/2 cup almonds
- 1/2 cup pistachios
- Few drops of vanilla extract
Instructions
