Kaju pista roll recipe with step by step photos. Kaju pista roll is a very rich, fancy looking expensive sweet you get in famous sweet shops but it is ridiculously easy to make at home. As the name suggests this sweet is the pure goodness of kaju (cashews) and pista (pistachios).
I have made kaju pista rolls many times, but did not take photos. I made kaju pista rolls yesterday for sharing the recipe here. This is a very easy kaju pista rolls recipe, no need for sugar syrup consistency, no complicate steps. If you can powder the nuts and knead them lie dough, you can make kaju pista rolls easily 🙂
To make kaju pista rolls recipe, there is absolutely no need for ghee, just few drops of ghee for greasing which you can easily replace with oil. Use a parchment or butter paper for easy rolling and folding. Here I have not used any food coloring, the white layer is kaju and green one is pista. I have used cardamom powder for flavoring, you can use saffron, rose water etc. Just two important point is, make sure your nuts are completely dry and free of moisture. You can even slightly warm up the nuts but do it for just few seconds, next use powdered sugar as is makes a smooth and soft dough.

Kaju pista roll recipe with step by step photos.
1. Powder cashews, pistachios and sugar seperately and set aside. Make sure there are no large chunks of nuts in the powders. If needed you can slightly sieve the nut powders.
To make kaju part.
1. Heat a pan and add 3/4 cup powdered sugar. Saute in low flame for few seconds. Add 4 tablespoons water to the sugar and mix well. let the sugar dissolve completely, no need to check for syrup consistency.
2. Now add the 1 12/ cups of cashew powder to the sugar syrup and mix well. Cook in low flame till all the water is absorbed and the whole mixture turns into a soft lump. Remove to a plate and let it become warm.
To make pista part.
1. Prepare a same soft lump with 3/4 cup pistachio powder, 1/4 cup sugar with 2 tablespoons water.
Once warm, knead both the nut mixture into a very soft and smooth dough. If you knead it while it is still warm, the mixture wont turn dry or crack, else add few teaspoons of hot water. (If you add milk, the sweet will not stay good for long time)
To make kaju pista rolls.
1. Take both the dough balls, a parchment paper and a rolling pin. Grease the paper and rolling pin with few drops of oil or ghee.
2. Take the cashew dough and roll it to a very thin circle.
3. Take the pistachio dough and shape it to a thin log.
4. Place the pistachio log in one corner of the rolled cashew and roll it tightly. Seal the ends. By now the log will be very thick. Cut the whole log into 4 parts.
5. Grease your hands and roll each part into a thin log again. Just place it on the parchment paper and roll with your hands. By now the log will be thin.
6. Cut each log into desired size. Kaju pista roll is ready to serve. It will become little hard in sometime. Store in airtight box. Stays good for 5-6 days in room temperature.

2. Do not add more water than mentioned to the sugar.
3. Make sure the nuts are completely dry and moisture free.
