Iyengar bakeries are those tiny bakeries you find in every nook and corner of Bangalore and here in Tamilnadu too. I used to frequently buy these khara biscuits, dilpasand, honey cake etc from these bakeries. Here even our local bakery sells a delicious khara biscuit. I got few requests for this iyengar bakery style khara biscuit and since it is my favorite too, I immediately made some.
These homemae khara biscuits are exactly like what you get in bakeries except that these homemade ones are healthier. This khara biscuits recipe used whole wheat flour and no refined flour. Soft butter, milk powder and the spices makes these cookies really an indulgent and delicious.
To make khara biscuits recipe we need soft butter, whole wheat flour, milk powder, curry leaves, cilantro leaves, pepper powder, green chilies, curd. No baking powder is used in this recipe.
Store khara biscuits in airtight container and serve with coffee.

Step by step khara biscuits recipe
1.Take butter and sugar in a mixing bowl. Cream well until light and fluffy.
2. To this add whole wheat flour, milk powder, salt and mix well.
3. Add finely chopped curry leaves, cilantro leaves, green chilies. Also add white pepper powder and mix well.
4. Add 2-3 tablespoons curd and make a dough. Do not knead very hard.
5. Cover the dough in a parchment or butter paper and chill in fridge for 20 minutes.
6. 15 minutes before baking preheat oven at 180C
7. Roll the dough into thick circle. Cut out cookies of desired shape. Arrange on a well greased baking tray and bake in hot oven for 12-15 minutes. Serve khara biscuits with coffee.

Khara biscuits recipe iyengar bakery style
1 CUP = 250 ml
Ingredients
- 1 1/2 cup whole wheat flour
- 1 tablespoon milk powder
- 100 grams or 1/2 cup soft butter
- 2-3 tablespoons curd
- 2 tablespoons sugar
- 1/2 cup finely chopped cilantro leaves
- 20 curry leaves finely chopped
- 6-7 green chilies very finely chopped
- 1/2 teaspoon pepper powder
- Salt
Instructions

Notes
2. You can use even use fresh mint leaves but do not leave out cilantro leaves
3. You can add 2 tablespoons grated cheddar to the dough
