There are many types of murukku made in Tamilnadu for festivals like Diwali,Krishna jayanthi. Mundiri murukku is one among them,very flavorful with natural fat from cashews, very crispy melt in mouth murukku, very similar to butter murukku with no butter!

You need just 1 teaspoon hot oil to be mixed in the murukku dough, the fat released from cashews makes this murukku very crunchy and also nutty. This is a vegan murukku that everyone can enjoy. I have added omam and chilli powder as I wanted to make spicy murukkku, You can leave out chilli piwder to make light colored murukuu too.

I made this cashew murukku few days back just to post here :), I had this recipe in one of my cookbooks and wanted to try for long time. last week I wanted to try some easy snack and this recipe was promising. The only thing is you have to grind the cashews, other than that, cashew murukku can be made in a jiffy, if you have store bought idiyappam flour handy this murukku gets ready in 20 minutes!. I made very small quantity as I was making for the first time and it was all gone in 1 day!

Mundiri murukku recipe with step by step photos.

1. Dry roast and powder the cashews. Heat oil for deep frying.

2. Take processed rice flour,cashew flour, hot oil, omam/carom seeds, chili powder (if using) and salt in a mixing bowl. Rub the hot oil well till the mixture resembles fine crumbs.

3. Add water slowly and knead to a smooth dough.

4. Take the murukku achu with desired shape (star or round) and fill with dough.

5. Press into hot oil and deep fry from both side till golden.

6. Store mundiri murukku airtight and serve as required.

Ingredients

  • 1 cup rice flour processed/idiyappam flour
  • 18 whole cashews
  • 1/2 teaspoon omam/ajwain seeds
  • 1 teaspoon hot oil + Oil for deep frying
  • Salt
  • 1/2 teaspoon chili powder optional
  • water

Instructions

  • Dry roast and powder the cashews. Heat oil for deep frying.
  • Take processed rice flour,cashew flour, hot oil, omam/carom seeds, chili powder (if using) and salt in a mixing bowl. Rub the hot oil well till the mixture resembles fine crumbs.
  • Add water slowly and knead to a smooth dough.
  • Take the murukku achu with desired shape (star or round) and fill with dough.
  • Press into hot oil and deep fry from both side till golden.
  • Store mundiri murukku airtight and serve as required.

Notes

1. Do not make the dough very tight, it will be difficult to press as well as murukku will turn hard.
2. You can add melted butter instead of hot oil in the dough.
3.You can use homemade processed rice flour too
