Paan ice cream recipe with step by step photos. Sharing a wonderful dessert recipe with you all today. Paan ice cream recipe is an easy to make homemade ice cream recipe with very few ingredients.

This paan ice cream recipe is eggless and no milk powder is also used here. Just the goodness of milk, fresh cream, pan leaves and gulkand. I have added fennel seeds and cardamom powder for flavor. This is an absolutely Indian flavored ice cream. The taste of this paan ice cream recipe is a cross between thandai and meeta pan.

To make paan ice cream recipe I have used very tender paan leaves so the flavor is not very sharp. The flavor and taste of gukand is beautifully complimented by paan leaves in this paan ice cream recipe. Since we are not using ice cream maker, we need to hand churn the ice cream for breaking the ice crystals. Though you can use a electric beater I always prefer to use a fork for this as it is less messy and less clean up work :). If you have an ice cream maker use it by all means 🙂

Step by step paan ice cream recipe

1.Take thoroughly cleaned paan leaves, fennel seeds, cardamom seeds, gulkand in a mixer jar.  Add 3/4 boiled and chilled milk to it. Grind to a smooth puree. If needed you can pass it through sieve.

2. Take chilled fresh cream and icing sugar in a mixing bowl. Beat till soft peaks are formed.

3. Now gently fold the paan mixture to the cream.

 

4. Pour it into freezer safe box and freeze for 3-4 hours.

5. Remove the ice cream mixture from freezer and whisk well to break the ice crystals. Repeat this process for 4-5 times at 2 hours interval.

6. After 4th time freeze the mixture for 8-10 hours. Scoop and serve paan ice cream as dessert.

Ingredients
  

  • 3-4 tender paan leaves
  • 3 -4 teaspoons gulkand or rose preserve
  • 1/2 teaspoon fennel seeds
  • 2-3 cardamom pods
  • 3/4 cup boiled and chilled milk
  • 400 grams fresh cream chilled
  • 2 tablespoons icing sugar

Instructions
 

  • Take thoroughly cleaned paan leaves, fennel seeds, cardamom seeds, gulkand in a mixer jar. Add 3/4 boiled and chilled milk to it. Grind to a smooth puree. If needed you can pass it through sieve.
  • Take chilled fresh cream and icing sugar in a mixing bowl. Beat till soft peaks are formed.
  • Now gently fold the paan mixture to the cream.
  • Pour it into freezer safe box and freeze for 3-4 hours.
  • Remove the ice cream mixture from freezer and whisk well to break the ice crystals. Repeat this process for 4-5 times at 2 hours interval.
  • After 4th time freeze the mixture for 8-10 hours. Scoop and serve paan ice cream as dessert.

Notes

1. You can use whipping cream instead of fresh cream
2. If using ice cream maker, make the base and churn as per manufacturer's instructions.
