Paneer bhurji recipe with step by step photos. A quick and easy North Indian breakfast recipe with scrambled paneer. Bhurji means scrambled and paneer bhruji means scrambled paneer. Paneer bhurji is a very quick to make easy breakfast recipe that you can make in 10 minutes. Paneer bhurji is best served with bread, paratha or rotis.
Paneer bhurji is basically scrambled paneer quickly sauteed with few spices. It is rich and has a chewy texture. I usually add very finely chopped bell peppers in my paneer bhurji recipe but it is optional. Paneer bhurji is usually made with onion, tomatoes and scrambled paneer. If using vegetables make sure to chop them very finely to ensure even cooking. Finished paneer bhurji is garnished with loads of cilantro leaves and a good dose of lemon juice. Bhurji recipes are very popular for their ease and speed. Few other popular Indian bhurji recipes are egg bhurji, gobi bhurji etc.
To make paneer bhurji recipe I always scramble the paneer with hand. You can grate the paneer if you wish, even pulse the paneer in mixer but I always prefer to scramble the paneer with hand. Few uneven bit of paneer here and there adds to the texture well. Do not cook paneer burji for long time after adding scrambled paneer as it will result in dry and hard paneer bhurji. It is best to use homemade paneer for paneer bhurji as it is very soft and fresh.

Paneer bhurji recipe with step by step photos.
1. Bring out the paneer from refrigerator and thaw for 30-60 minutes. Scramble the paneer well with hands. It is ok if there are few uneven pieces of paneer.
2. Heat a kadai with 1 tablespoon oil. Add cumin seeds and let them crackle. Add slit green chilies, minced ginger-garlic and saute well till the raw smell goes off.
3. Add finely chopped onions and saute till color changes slightly.
4. Add finely chopped tomatoes and mix well. Saute till the tomatoes turn mushy and leave out oil.
5. Add finely chopped bell peppers and mix well. Saute in high flame for 3-4 minutes. Season with salt. Add garam masala powder and turmeric powder. Mix well and saute for 6-7 more minutes.
6. Add scrambled paneer and toss quickly. Cook for 3-4 minutes. Add finely chopped cilantro leaves and mix well. Remove from flame. Add lemon juice just before serving paneer burji.
Vegans can make tofu burji by using scrambled tofu instead of paneer

Ingredients
- 200 grams paneer grated or scrambled
- 1/3 green bell pepper very finely chopped
- 1/3 red bell pepper very finely chopped
- 1/3 yellow bell pepper very finely chopped
- 1 to mato finely chopped
- 1 onion thinly sliced
- 2-3 green chilies slit
- 1/2 teaspoon garam masala powder
- 1/4 teaspoon turmeric powder
- 1 teaspoon minced ginger-garlic
- 1/2 teaspoon cumin seeds
- 2 tablespoons cilantro leaves finely chopped
- 1/2 tablespoon lemon juice
- 1 tablespoon oil
- Salt
