Usually we add khova / khoya while making pumpkin halwa but this time I added condensed milk and made pumpkin halwa in the same lines of carrot halwa. In this pumpkin halwa recipe, only 2 tablespoons ghee is used. Sweet pumpkin or yellow pumpin/parangikai is used for making this pumpkin halwa. It is a very delicious and rice sweet/dessert with the natural sweetness from pumpkin so well mixed with sweetness from condensed milk. Addition of fried nuts add a nice taste and bite to the halwa.
To make pumpkin halwa recipe, there are 2 methods, you can slightly cook the pumpkin in pressure cooker or steamer and then make halwa or you can directly cook the grated pumpkin in condensed milk just like we do in carrot halwa.
Serve pumpkin halwa as a sweet or dessert after meals. This pumpkin halwa tastes excellent both hot and chilled. Serve it hot with a scoop of ice cream for a lovely fusion dessert or chill thoroughly and serve as rich dessert on a hot day.

Pumpkin halwa recipe with step by step photos:
1. Cut, peel and grate the pumpkin. Measure the required amount and set aside.
2. Chop almonds, cashews and mix with raisins.
3. Heat 2 tablespoons ghee and fry the nuts. Remove the fried nuts and set aside.
4. Add the grated pumpkin to the remaining ghee and saute till it wilts.
5. Add saffron soaked milk and mix well. Add condensed milk and mix well.
6. Cook in medium flame till the pumpkin is cooked and all the moisture is gone. The halwa will now not stick to the pan. Add cardamom powder and mix well. Add fried nuts and mix well.
7. Serve pumpkin halwa hot or cold.

Ingredients
- 2 cups grated pumpkin tightly packed
- 2 tablespoons milk
- Few saffron strands
- 1/4 cup sweetened condensed milk
- 6-7 almonds chopped
- 6 cashew chopped
- 10-12 raisins
