I have even made a post on Indian recipes with leftover rice. Now this is a detailed post with step wise pictures for making rice patties or rice cutlets. Last week I had some leftover rice and made these super delicious rice patties or rice cutlets. This is our favorite snack and as always it was so tasty and we loved it. It is best to serve these rice tikkis piping hot with some green chutney or sauce.
In this rice patties recipe I have avoided bread crumbs and used gram flour. Also I have not added any cheese or paneer. This is a vegan and gluten free rice patties recipe. You can however coat the shaped tikkis with bread crumbs and add some grated paneer along with veggies if you wish. In whichever way you make these cutlets will be delicious. These are no deep fry rice patties. I have shallow fried them one by one with just 2 tablespoons oil in a very small kadai. It sure takes time but very tasty and crispy cutlets with very less oil.
To make rice patties recipe the cooked rice had to be mashed thoroughly. I have made it quiet spicy by adding ginger-green chili paste. You can make it mildly spiced by adding very less chili powder or just pepper powder. I have also added some sweet corn and finely chopped onions. I suggest you add onions as they are very good in this recipe. Instead of corn you can add peas or just omit it too.

Step by step rice patties recipe.
1.Take cooked rice in a mixing bowl.
2. Add boiled and peeled potatoes to it. Now mash the potatoes and mashed rice together thoroughly.
3. Next add crushed ginger chili paste, chopped onions, boiled corn and gram flour. Make a dough by mixing all the ingredients very well. Add some gram flour if the dough is not binding well.
4. Make 10-12 equal sized balls and shape each one into a cutlet.
5. Heat 2 tablespoons oil in a small kadai. Shallow fry a shaped cutlet in low medium flame until it turns golden brown.
6. Shallow fry the remaining cutlets similar way. Serve rice patties hot with sauce or green chutney.

1 CUP = 250 ml
Ingredients
- 1 cup cooked rice
- 1 big potato boiled and peeled
- 3-4 tablespoons gram flour
- 1/2 cup boiled corn kernels
- 1 onion finely chopped
- 1/2 teaspoon cumin powder
- 1/2 " ginger + 3 green chilies coarsely ground.
- Salt
- 2-3 tablespoons oil
Instructions
