I recently saw this roasted corn salad in the menu of a cafe. It looked interesting to me as I used to make salad with boiled corn only. As I had some fresh sweet corn ears hand tried this out yesterday. The corn salad was so yummy and delicious.
With very few healthy ingredients and simple seasoning you can make this roasted corn salad in no time. One of the best after school snack you can make for toddlers and kids. Just keep everything ready and toss just before serving. While making for toddlers and kids just reduce the chili powder or add pepper powder.
Serve roasted corn salad with tea for snack or you can also serve this as side salad with soup, toast, pizza.

To make roasted corn salad first of all grill or fire roast the corn ear well. Scrape the roasted corn into a mixing bowl. Add finely chopped onions, tomatoes, cilantro leaves, salt, chili powder, lemon juice and mix well. Finally top with roasted peanuts and serve 🙂
While making in large scale just keep all the ingredients in separate bowls. Toss the salad in individual bowls and top with roasted peanuts to prevent it from getting soggy.

To make this salad richer you can make a mayo dressing for this. Just mix eggless mayo with emon juice, salt, pepper powder well.
Add this dressing to the other ingredients just before serving.
Roasted Corn Salad With Honey Lime Dressing
Honey lime dressing is one more variation you can make for this salad. Mix 3 tablespoons honey and 3 teaspoons lime juice well. Add salt, chili powder to taste.
Add this dressing to the prepared salad and serve immediately.

You can add chopped avocado to corn salad to make this a filling light meal.
Instead of roasted corn you can use boiled corn.
Along with peanuts roasted sesame seeds can also be added.
