Instant sambar recipe- quick and easy, truly delicious instant sambar recipe that takes 10 minutes from start to finish. This instant sambar tastes especially good with hot steamed rice.
This sambar recipe takes exactly 10 minutes from start to finish if you have chopped veggies handy. Even if you do not have enough time for chopping veggies you can just use onion and tomatoes. This instant sambar recipe uses freshly made sambar masala so you do not need sambar powder to make sambar this way.
I often times get requests for quick and easy recipes that office goers and bachelors can easily make. This instant sambar recipe is one such one. You can even make spice blend the before night and make sambar next day. This easy sambar recipe is a very popular one in our family and it is also my go to recipe especially when I a pressed for time.
To make sambar recipe instantly all you need is a mixer grinder and good pressure cooker. Ready made tamarind paste saves even more time but I always prefer freshly extracted tamarind juice. I prefer to use shallots instead of big onion in sambar recipes. Carrots, bell pepper also goes very well in this sambar recipe.
Serve sambar with steamed rice and ghee.

How to make instant sambar recipe
1.First of all heat oil in a pressure cooker. Once the oil is hot fry 3 teaspoons coriander seeds, 1/2 teaspoon black peppercorns, 1/8 teaspoon methi seeds, 1 tablespoon channa dal and finally add 4-6 dried red chilies.
2. Fry till golden brown. Now add 1/4 cup toor dal and saute for 2 minutes. Let cool for 5 minutes. Reserve the oil in the same cooker.
3. Once cooled down, grind the fried ingredients into a thick paste. Add just enough water to make a paste.
4. Now heat the reserved oil again in the same cooker. Temper with mustard seeds and curry leaves. Add shallots, chopped tomatoes and chopped bell peppers. Saute for 2 minutes.
5. Add turmeric powder and saute well. Next add the tamarind extract and mix well.
6. Add the ground masala and mix thoroughly. Finally add 2 cups water and required salt. Mix well and close the cooker. pressure cook for 10 minutes or up to 4 whistles.
7. Once the pressure is released check the consistency of sambar. If it is too thick for your liking add 1/4-1/2 cup water and bring to a boil. Finally add cilantro leaves and serve sambar with rice.

Ingredients
To roast and grind
- 1/4 cup pigeon peas
- 3 teaspoons coriander seeds
- 1/2 teaspoon black peppercorns
- 1/8 teaspoon methi seeds
- 1 tablespoon channa dal
- 4-6 dried red chilies
- 2 teaspoons oil
Other ingredients for sambar
- 20 shallots chopped
- 1 tomato chopped
- 1 bell pepper cubed
- 3 tablespoons thick tamarind juice
- 1/2 teaspoon turmeric powder
- 10 curry leaves
- 1 teaspoon mustard seeds
- Salt
- 2 cups water
Instructions

2. You can use a mix of toor dal and moong dal.

This sambhar looks so good that I just had to try it! I was especially intrigued by the ground masala paste instead of using store-bought boxed Sambhar masala. The step-by-step pictures are enticing!
I made it in the Instant Pot, though. I just set it for 5 minutes, did Natural Pressure Release (NPR)–waited until the silver button on the lid dropped down.
I also used the frozen Sambhar Mix vegetables instead of the listed veggies.

I made your recipe and it came out so well. Needless to say I did not have readymade sambhar masala…I would be making sambhar this way only. I stopped at 3 whistles but I am sure 4 would have given even better result.
