I am a very big fan of this cardamom flavored tutti frutti rava cookies from our local bakery. They are white as milk, cute shaped, very crispy and delicate too. Semolina cookies are as light as feather and crumble very easily. The texture is so good, melt in mouth and very crunchy too. It was my long time wish to make these semolina cookies recipe at home. Last week I tried these tutti frutti semolina cookies recipe and it was big hit.
You can whip up this semolina cookies recipe easily with pantry staple ingredients. Rava, butter, maida or wheat is all you need to make these rava cookies. Addition of tutti frutti is my idea of adding some special factor to this crumbly semolina cookies. Colorful tutti frutti makes the white cookies very attractive. You can even add finely chooped nuts, raisins or just make plain, melt in mouth rava cookies too.
To make semolina cookies recipe I have used whole wheat flour. To get whiter cookies you can use all purpose flour. The addition of rava makes the cookies very crispy and light. Apart from that I love the addition of rose essence in this cookies. Tutti frutti and rose essence makes these cookies very exotic. I love the way my cookies turned out, exactly like the ones I buy from the bakery. The entire house was filled with cardamom and rose aroma.

Step by step semolina cookies recipe.
1. Preheat oven at 170C. Take soft butter and sugar in a mixing bowl. Cream well until the mixture turns light and fluffy.
2. Add wheat flour, rava, baking powder and mix well.
3. Add tutti frutti and mix well. bring together and knead lightly. I Add cardamom powder and rose essence. If needed add 2-3 tablespoons of milk.
4. Scoop out equal sized balls from the cookie dough. I used a tablespoon spoon for uniform sized cookies.
5. Place the cookie balls in a greased baking sheet.
6. Bake in the preheated oven for 12- 15 minutes. Be watchful as the color of the cookies will remain white. If you leave for long time in the oven cookies will burn and turn hard.
7. Once baked cool the cookies thoroughly before storing airtight. Serve semolina cookies as snack with coffee.

- 1/2 teaspoon cardamom powder
- 3 tablespoons milk
