Did you know that chickpea is an excellent vegan alternate for eggs? Chickpea flour slurry whisked vigorously with water until frothy behaves like eggs. Here we are using that batter to make omelette. I have previously shared a recipe for making vegan savory french toast with chickpea flour.

This chickpea vegan omelette is super easy to make. There is no grinding or resting the batter required. Just mix, whisk and cook, yummy breakfast in minutes. What’s more you can make this omelette thin or thick, crispy or soft and with as many veggies you want.

To make this omelette even more filling and wholesome you can add stuff it with some vegan cheese or sauteed tofu, fold and serve 🙂

However you plan to serve and eat, this is one recipe you can’t miss. It is simpler, quick and requires very easily found ingredients compared to other vegan omelette recipes out there!

Vegan chickpea omelette recipe

You Will Need

Chickpea flour or garbanzo bean flour– use best quality chickpea flour. Fine chickpea flour works best for this recipe.

Seasoning– I have used pink salt, pepper powder here. You can use paprika, curry powder, turmeric powder , minced green chilies, ginger- garlic as you prefer

Veggies– I like to load this vegan omelette with as many veggies as possible. I like to add grated carrots, boiled corn, onions, tomatoes, chopped cilantro and methi leaves. If varieties of veggies are not available just add onions and tomatoes. No need to saute the veggies beforehand.

Step By Step Vegan Omelette Recipe

Combine chickpea flour, salt, sugar and pepper powder in a bowl. Mix well.

Add water gradually and mix well. Whisk or beat the batter vigorously until it turns frothy. The batter should be of free flowing consistency, slightly thinner than pan cake batter.

Now add the chopped veggies and mix well.

heat a cast iron skillet and add few drops of oil. Pour 1/2 cup batter ina circle. Do not spread the batter. Cook in medium flame for 2-3 minutes.

Flip and cook for 2 more minutes until the edges turn crispy.

Remove from flame and serve vegan omelette warm.
