A very colorful vegetable salad recipe with loads of veggies, sprouts and fried noodles (optional). The dressing is a sweet and salty one. I loved the idea of adding some crunch factor to the vegetable salad recipe very much. I however did not add fried noodles. I never stock up on noodles and I don’t prefer noodles in a healthy salad recipe. I deep fried some millet sevai and added to the vegetable salad. The fried sevai tasted wonderful in this salad recipe. The dressing used for vegetable salad recipe is also a very delicious one. However if you are planing to pack this vegetable salad in tiffin, I suggest you send fried sevai separately, just to be mixed before eating. You can chop all the veggies and keep in fridge, mix the dressing and add fried sevai just before serving.
To make vegetable salad recipe I have added veggies like purple cabbage, carrots, colored bell peppers and cucumbers. You can also add onions, baby corns, lettuce etc. Moong sprouts are added for more nutrition and some crunch. Coarsely crushed peanuts are my favorite in this veg salad recipe, you can add crushed walnuts or almonds too. For sweet and salty dressing, honey, chili flakes, salt,lemon juice and vinegar are used. Serve vegetable salad immediately once you add fried sevai. You can serve this veg salad as a snack or side dish.

1. Heat a wok 1ith 1/8 teaspoon oil. Add all the chopped vegetables except cucumber and toss for 20-30 seconds. Do not cook for more time. Remove the veggies to a deep mixing bowl.
2. Add chopped cucumber and toss well.
3. In a small mixing bowl add the dressing ingredients and mix very well. Let the dressing sit for 15 minutes before adding to the salad.
4. Next add moong sprouts to the vegetables. Toss very well.
5. Add the dressing to the salad and mix very well.
6. At the time of serving, add fried sevai or noodles, crushed roasted peanuts and toss just once or twice. Serve vegetable salad immediately.
Vegans can replace honey with sugar in this vegetable salad recipe.

Ingredients
- 2 cups chopped vegetables cabbage, carrots, cucumber, bell peppers
- 3/4 cup moong sprouts
- 1 cup fried noodles or instant sevai rice noodles
- 1/4 cup crushed roasted peanuts
- For dressing
- 3 tablespoons vinegar
- 3 tablespoons honey
- 1/2 teaspoon chili flakes
- 1/2 teaspoon lemon juice
- salt
- 2 teaspoons water
Instructions
