Carrot Pancakes Recipe

Ingredients

  • 1.5 cups milk
  • 2 tablespoons butter more for cooking pancakes
  • 1/2 teaspoon vanilla
  • 3 tablespoons sugar
  • 1 cup Wheat flour
  • 1/2 teaspoon baking soda
  • salt a pinch
  • 3/4 cup grated carrots

Instructions

  • Boil and slightly cool the milk. Add butter to the warm milk and let it melt.
  • Stir in vanilla and add sugar to the milk. Whisk well.
  • Mix wheat flour, salt and baking soda. Add the flour to the wet ingredients and mix swell. Add more milk if needed to make a thick flowing batter.
  • Fold in the grated carrots and mix.
  • Heat a tava or griddle. Pour a ladle full of pancake batter on hot tava. Do not spread.
  • Add butter as needed and cook the pancake from both sides. Serve carrot pancakes with honey or maple syrup.
