Almond shortbread cookies are one easy and tasty holiday bake you will love. With just very few ingredients, no baking powder or soda these shortbread cookies are so tasty with the goodness of almond sin every bite. Here is how to make delicious almond shortbread cookies easily at home.

I love to bake cookies at home and especially during holidays we go on a baking spree. From choco chip cookies to khara biscuits to pizza crackers to fruit cookies to coconut cookies, there is never a dull cookie moment at home 🙂 After all homemade cookies are more special and fun.

I particularly like to bake shortbread cookies for their ease. Just make the dough, chill, slice and bake. How easy is that? Moreover shortbread have that amazing buttery flavor and taste. When I baked this pistachio slice and bake cookies, I also wanted to try almond shortbread cookies. I got this recipe from my friend and she said she found it here. I tried out and it turned very good. Since then I have made in many times with exceptional results.

These shortbread cookies are so flavorful and crispy. They go very well as snack with a glass of milk for toddlers and kids also. If you like exotic and tasty homemade cookies, you should totally try this one

Absolutely easy recipe, no need to shape or cut and arrange each cookie

Ingredients You Will Need

To make these almond shortbread cookies recipe you will plain flour or wheat flour, ground almonds, sugar, butter, almond extract and some chopped almonds. Basically these are my pantry staples and you can easily swap vanilla for almond extract.

Here I have used unbleached organic plain flour, cane sugar and yellow unsalted butter. You need the butter to be soft and at room temperature. As I have used raw sugar, my dough was not very smooth as you can from the photo. For more smooth texture use refine or castor sugar.

Use good quality almonds that are not rancid. Apart from adding ground almond in the cookie dough, in this recipe we also add a good dose of chopped almonds as topping.

How To Make Almond Shortbread Cookies

Measure out the butter and sugar into a mixing bowl. Using a electric beater or wired whisk or stand mixer, cream the butter, sugar until fluffy and light. Also add almond or vanilla extract.

To the creamed butter add salt, plain flour and almond flour.

Mix well and bring the dough together. Just add 2 tablespoons milk to bring the dough together.

Grease a 8 inch pizza pan or round baking tin generously with butter. Also dust with flour.

Spread the dough evenly in the prepared baking tray. Smooth out the top using a rolling pin or back of a cup.

Using a sharp knife cut the dough into slices of desired shape. Top with sliced almonds as required.

Cover and chill the dough for 2 hours.

15 minutes before baking, preheat the oven at 180 C / 350 F.

Place the pan with cookie dough inside the oven and bake for 30-35 minutes or until the top turns golden.

once baked, break the shortbread cookies along the marked lines. Cool and store in airtight container. Serve with tea or milkshake.

  • 3/4 cup almond flour
  • 2 teaspoons almond or vanilla extract
  • 1-2 tablespoons milk
  • 1/2 cup chopped almonds
